I removed eWeLink from the linked services in the Google Home app but my eWeLink devices do still show up.

Sometimes Google Home doesn’t display the linked services nicely in the Google Home app. You can find an overview of all linked services on https://myaccount.google.com/accountlinking and remove both Smart We Link and eWeLink Smart Home from there. If you want to link your eWeLink account again you can do that in the normal way in the Google Home app.
